No Boil Ricotta and Spinach stuffed Manicotti


On my way home from work I was trying to think of something that I could make that was easy but delcious. Since I was craving Italian at the time, I immediately thought of Manicotti! These cheese stuffed noodles are no fuss and are great for left overs. Here is my recipe for a no boil manicotti that you can whip up in 15 minutes and throw in the oven.

The ingredients you’ll need:

  • 2 Jars Spaghetti Sauce
  • 1 cup of water
  • 1 clove of garlic
  • 1 package Manicotta pasta shells
  • 8 ounces Ricotta cheese
  • 1.5 shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 cup frozen spinach
  • 1 tsp basil
  • 2 tsp parsley
  • 1/2 tsp black pepper
  • 1/2 tsp salt

  1. Pour 1.5 cups of spaghetti sauce at the bottom of the 9X13 pan.
  2. Mix the rest of the spaghetti sauce in a bowl with the 1 cup of water.
  3. Mix the ricotta cheese, 1 cup mozzarella cheese, 1/2 cup parmesan cheese, egg, 1 tsp basil, 2 tsp parsley, 1/2 tsp black pepper and spinach together.Image
  4. Start filling the uncooked Manicotti noodles with a spoon or your hands and place them in a row in the 9X13 dish.
  5. After the noodles are all placed in the pan, pour the rest of the sauce on top of the noodles.
  6. Sprinkle the rest of the cheese on top.
  7. Cover tightly with foil and bake for 6o minutes and uncover the foil and bake an addition 5-10 minutes.
  8. Serve and enjoy!!
